Almond Milk

  • 100g AlmondsAlmond_Milk
  • 550g water (filtered if possible)
  • 1/4 tsp salt
  • Pinch of vanilla powder  (optional)

Soak almonds and salt overnight (or for around 12 hours). This is to break down the phytic acid and enzyme inhibitors and thereby culturing beneficial enzymes.

Rinse well and then mill finely in your food processor or suitable machine. Add 550g water and mix on highest speed for one minute.

OPTIONAL – Add a pinch of vanilla powder and for a slightly sweeter milk you can add your favourite sweetener ie. raw honey or stevia.

TIPS:

Don’t throw away the almond meal! Spread the almond pulp on a baking tray and dehydrate in oven (on lowest heat) until completely dry (taste test is the best way to tell). Times will vary from oven to oven. Thereafter process on highest setting in blender or food processor and now you have Almond Meal too!

If you are using your nut milk for porridges, bircher muesli etc then there’s no need to strain it!
