🌿 **QUICK PICKLED LOCAL FENNEL** Fennel is in sea

🌿 **QUICK PICKLED LOCAL FENNEL**

Fennel is in season, this is such a simple way to make it last a little longer.

Crunchy, tangy and lightly spiced — delicious with salads, sandwiches, cheese, fish, roast meats or straight from the jar.

Note: this is a fridge pickle recipe not a shelf stable preserve.

INGREDIENTS

3 large fresh local fennel bulbs, very thinly sliced
2½ cups apple cider vinegar
2½ cups water
2 tsp sea salt
2 tsp raw sugar
1½ tsp fennel seeds
1½ tsp black mustard seeds
1½ tsp black peppercorns
2 garlic cloves, thinly sliced
4–5 strips lemon peel
A few fresh fennel fronds

METHOD

Add the apple cider vinegar, water, salt, sugar, fennel seeds, mustard seeds and peppercorns to a saucepan.

Bring just to the boil, stirring until the salt and sugar dissolve.

Pack the freshly sliced fennel into clean jars with the garlic, lemon peel and a few of the beautiful feathery fennel fronds.

Pour the hot pickling liquid over the fennel until completely covered.

Allow to cool to room temperature, pop the lids on and **store in the fridge**.

You can eat it once chilled, but it's even better after 12–24 hours when all those flavours have had time to mingle.

🌿 Fresh local produce, preserved simply.

ORDER BY 2.30PM SUNDAY if you would love some in your order. (Fennel ..haha NOT the pickles!)

Happy Father's Day to all the wonderful dads out t

Happy Father's Day to all the wonderful dads out there.
Heres just a snapshot of some of the great men in our lives—dads, uncles, those who have passed, and those yet to be fathers! —living life to the fullest and with love.
.
My fav part of these photos is seeing the young men and boys.
.
Even if a dad or granddad is no longer with us, that legacy lives on—it's in their DNA, in their hearts, and in their bones. They already know the true gift of fatherhood.
.
Celebrating every single one of you today. 😍
.
Oh AND remember order now for your organic delivery tomorrow- then go celebrate dad!

Packing as many veggies as I can into whatever I'm cooking! - for my once VEGETARIAN turned heavy meat eating young adults!

Asian-inspired lettuce cups on the BBQ. Finely chopped vegetables cooked through the mince, spooned into crisp cos lettuce leaves...YUM!

A cheeky butcher bird decided he loved it too!

I use whatever veg I have but never skip the ginger and the asian dressing!

Its also a great winter way to use cos lettuce! 🥬💚

We love our team... and we love celebrating the many gifts they bring. 💛

One of our beautiful team members teaches an incredible Yin Yoga class every Monday at 5.30pm—a gorgeous way to slow down, stretch, and reset.

Another regularly steps in as a substitute teacher... and she's also the talented baker behind our delicious keto bread! 🍞

Have you been to one of their classes, or enjoyed a loaf of her bread? We'd love to hear what you think! ✨ tag her IYKYK
