For reasons out of our control (or course ;)) our long weekend Tuesday delivery became a Wednesday delivery this week!

Next Monday we will be back on track!

We were very disappointed with the quality of oranges, apples and zucchini’s this week. These items are coming to the end of their season and the quality is diminishing. We will be keeping a close eye on this, and if there is no improvement we will be replacing the current apple and orange ‘staples’ with new items. Meanwhile…remember to keep your apples in the fridge!

As mentioned previously, the fruit situation can be a bit limited as we wait for the summer fruits!

What’s With the Activated Nuts?!

Activated_NutsRaw nuts (not roasted and salted…but RAW nuts) really are a healthy snack. They are loaded with protein, healthy fats, fibre and important minerals like zinc, magnesium and calcium. However, nuts also contain natural chemicals that can interfere with the absorption of these nutrients. Raw nuts contain phytic acid and enzyme inhibitors that can reduce the body’s ability to absorb certain nutrients properly.

Activated nuts are literally just nuts that have been soaked in water and salt for a period of time. This soaking begins the germination or sprouting process and thus increases the nutrient value whilst breaking down the problematic compounds that help enhance their digestibility.

SO HERE’S HOW!

For each cup of nuts add approximately 1 teaspoon of salt (or half that for pecans and walnuts). Cover with water (preferably filtered). Leave the nuts to soak for around 7-12 hours (almonds will need longer, between 12-14 hours).

Strain the nuts and rinse. Unless you like soggy nuts… you will need to dry them out! Place your nuts in a single layer on a baking tray and bake them in your oven on the lowest heat possible (to preserve the nuts essential fats and nutrients). Each oven is completely different and drying time may take as long as 24 hours. Mine usually take about 6 hours. The taste test is the best test. Make sure the nuts are completely dry otherwise they can go mouldy.

Alternatively if you have a dehydrator that’s ideal for drying your nuts!

When they’re done store them in the fridge or a dark cool pantry in an airtight container.

TIP – If you would like ‘flavoured’ activated nuts, after you have soaked and rinsed, just prior to popping them in the oven, toss through your favourite flavour – TRY Tamari, Garam Masala and Honey, OR Cayenne Pepper!
