Ingredients:
60g butter
2 cups of nuts (eg. pecan, almond, pistachio, cashew)
½ cup coconut sugar
¼ cup maple syrup
¼ cup of rice syrup (or honey)
Zest and juice from one lemon or lime
Vanilla, cinnamon & cloves
METHOD
- Preheat oven to 180 degrees
- Melt butter
- Coarsely grind nuts
- Mix sugar, syrup, juice, zest, vanilla & spices
- Mix nuts and syrup together
- Cut filo pastry (I use the one from the fridge not the frozen one) to fit the baking dish you’re using.
- Layer 2 sheets at a time, brushing lightly with the melted butter. After 8 sheets, spread 1/2 the nut mix over. Repeat.
- Finish with about 8 more sheets of filo (still brushing butter every 2nd sheet), then pour any remaining butter over the top.
- Bake for about 40 mins until golden on top
