Healthy Hot Cross Muffins

Instead of waiting around for bread to rise, these muffins are super quick and will have your house smelling like Easter!

I doubled this recipe and then added chocolate chips and cacao to HALF THE MIX so I had two variations! 

Hot_Cross_Muffins

INGREDIENTS

  • 200 grams (1½ cups) whole meal spelt flour(or white spelt will give a more commercial result)
  • 125 mls (½ cup) milk
  • 85 grams (¼ cup) sweetener of your choice (maple syrup or rice malt syrup)
  • 60 grams (¼ cup) butter, melted
  • 1 egg
  • 1 teaspoon of baking powder
  • ¼ teaspoon of bicarbonate of soda
  • 1 teaspoon of acid (lemon juice or apple cider vinegar)
  • 1 teaspoon of cinnamon
  • 1 teaspoon of mixed spice
  • ½ teaspoon of vanilla powder, extract or essence
  • 80 grams  (½ cup) currants, sultanas or raisins (or a mixture)

For the glaze – mix ½ teaspoon of cinnamon with 1 tablespoon of sweetener and 1 teaspoon of water

To make the cross, skinny strips of cut apple work perfectly!

METHOD

Preheat your oven to 160 degrees Celsius.

Place your flour in a big bowl and make a well in the middle.

In a blender or food processor mix your melted butter, milk, sweetener, egg, baking powder, bicarbonate of soda, acid, cinnamon, mixed spice and vanilla for about a minute until well combined and a little frothy.

Add this to the flour and fold through gently until just combined. Don’t over mix it.

Spoon into the muffin cases and place your cross.

Bake for 15 minutes or until cooked through (firm to touch in the middle). Brush over the glaze whilst hot. Enjoy hot out of the oven or toasted in a sandwich press.

Can be frozen in an airtight bag or container.

VARIATIONS

Gluten and grain-free – Substitute the flour with 130 grams of buckwheat (or sprouted buckwheat) flour and 70 grams of almond meal.  They may need an additional 5-10 minutes in the oven too.

Chocolate hot cross buns – Add 1 tablespoon of cacao powder to the wet mix and replace the dried fruit with approximately 50 grams of chocolate chips.

  1. Very easy to make and quite tasty. As they are a muffin and not a bun, they cannot be compared with the traditional Hot Cross Bun, but they probably have more going for them on the health-side of things. Thank you for sharing the recipe.

  2. Hi Diane – Thanks for your comments and sorry for the delay in replying! It’s true that they can not be compared to a traditional ‘bread’ style bun, but they certainly have the smells of Easter. We just enjoyed the last of them for desert last night: I heated them up in the sandwich press then drizzled with caramel sauce and ice-cream… Yes the health benefits went out the window, but they were absolutely delicious! 🙂
