Summer Porridge – full of goodness!

If you are not a porridge fan, do not be put off by the title… my partner will eat this for dessert!

Similar to a Bircher muesli… The fruit juice has been swapped for almond milk, bringing a good dose of protein to start your day (and less sugar) plus a creamier consistency!

CADA_Coconut_Almonds_Dates_Apple

Into the food processor, and blitz (NOTE: if you do not have a processor, grate the apple and hand chop the other ingredients):

  • 1 or 2 ApplesSummer_porridge_ingredients
  • 1 handful Coconut – dessicated or flakes
  • 5 Medjool Dates, pitted
  • 1 handful Almonds (or a combination of any nuts and seeds)

Transfer to large bowl and mix in:

  • 2 cups almond milk (I make my own, recipe HERE and I do not strain it – therefore you keep all the goodness of the almond meal too) or  any milk of your choice… try coconut milk (although I’d suggest one cup coconut milk and one cup water).
  • 1 cup Rolled Oats (100g)
  • 2 tspn Cinnamon

OPTIONAL extras

  • 1 tbsp Raw Honey or Maple Syrup
  • Small handful Chia Seeds (1 tbsp)
  • Small handful Sunflower Seeds (1 tbsp)

Summer_PorridgeLeave overnight … and it’s ready to serve the next morning.

This makes a decent sized batch that will last in your fridge for a week (if it doesn’t get eaten first of course). Serve with a large dollop of yoghurt, chopped fruit, your favourite seeds and a sprinkle of cinnamon (and a little dash of raw honey or maple syrup if you like!).Summer_Porridge_in_a_Jar

TIP – for a nutritious breakfast or snack on the run… layer the porridge, yoghurt and fruit into a jar (make a few for the week)… and then you can grab and GO!
