With just 3 or 4 ingredients and 5 minutes of your time you have a mexican bean wrap ready to eat. Great for breakfast, lunch or dinner!!
All you need is:
- 1 x packet of wraps
- 1 can black beans, drained and rinsed
- 1/2 jar salsa
- Optional – 1 cup grated cheese
If you would like to be a little more creative you can add all kinds of things ie: garlic, fresh herbs, finely diced celery, carrot, kale, capsicum, corn
Put all the ingredients into a bowl and mix.
Lay out your wraps and put a large spoonful of mix onto one section. They will keep together better if you don’t use too much mix!
Fold the sides over to make a parcel.
I toast them in a sandwich press (for about 5 minutes) or you could bake them in your oven.
NOTE: Mountain Bread can tear/break easily. Don’t let that put you off… These great wraps are one of the few that have no nasties added to them. You can add extra ‘strength’ to your parcel by using another half a wrap under the mix.
Great served with a green salad… or I’ve served them here with my latest batches of sauerkraut!
