Super Seed Bread

Bread gets a tough wrap these days… but this bread is full of nutrients! So… not only is this one GOOD FOR YOU, but it is easy to make AND IT’S DELICIOUS.

I like to make 2 small loaves (my tins are approx 11cm x 22cm) or you can use one large (Note: rising and cooking time will likely be a bit longer).

  • Turn on your oven to 50 degrees Celsius (yes, 50 ;))

Put the following ingredients into a large mixing bowl:Super_Seed_Bread

INGREDIENTS

  • 3 cups spelt flour (or you can use standard flour)
  • 2 tsp dry yeast
  • 3 Tbsp chia seeds
  • 3 Tbsp pumpkin seeds
  • 3 Tbsp sesame seeds (and an extra handful to sprinkle on top)
  • 1/4 cup sunflower seeds (and an extra handful to sprinkle on top)
  • 1/2 cup oats
  • 1 Tbsn honey
  • 3 Tbsn macadamia oil (or olive oil is fine too)
  • 1/2 tsp salt
  • 2 cups water (lukewarm)

METHOD

  • Stir until all the ingredients are mixed (and no more… maximum 2 minutes). You will find this dough is very ‘sticky’… that’s fine… don’t be tempted to add more flour.
  • Super_Seed_Organic_Spelt_BreadScrape the dough into your two greased tins. Sprinkle some seeds on top and gently press them into the dough.
  • Pop into your warm oven and let ‘rest’ for 20-25 minutes to allow the dough to rise.
  • Once risen, leave your bread in the oven and turn up the heat to 200 degrees Celsius.
  • Cook for 40-45 mins – test with a skewer (if it comes out clean your bread is ready!).
  • Leave to sit for five minutes before turning out onto a wire rack.
  • Get out the butter and prepare for your feast! :)) Your super seed bread should slice perfectly with a good bread knife.

TIP: Make rolls instead, by putting heaped desert-spoons of dough onto a floured tray.

You just cannot beat the smell of freshly baked bread (hmmm, okay… fresh coffee maybe a contender ;)).
