Caramel Chocolate Chews – Raw and Nutrient dense!

Caramel_Chocolate_ChewsIf you can stop at one or two… then these little treats are good for you!! 

For the Snickers fans… it’s super easy to create Peanut Caramel Chocolate Chews instead!!

 

FOR THE CARAMEL

All you need is:

Note: other versions of dates will not produce the same ‘caramel’ flavour)

OR… for a SNICKERS version… add 1 tbsp Crunchy Peanut Butter

Process the dates in a food processor to make a sticky paste. If your food processor is not up to the job, I suggest soaking the dates for an hour first (this makes them soft and easier to meld). Add your nut/seed butter, plus a tiny pinch of fine rock salt and give it another whiz.

Raw Caramel Chocolate ChewsPlace the sticky mixture in the freezer for 5-15 minutes (long enough to make it easier to play with). I then divide the mix into about 18 pieces. I like to roll then into balls and then gently press in the sides to make them cube shape 🙂 Put them back in the freezer while you get the chocolate ready!

FOR THE CHOCOLATE

  • Place 100g (1/2 a cup) chopped, good quality dark chocolate (or chocolate chips) into a small saucepan. On a very LOW heat whisk continuously until melted. Remove from heat.

OR, make your own Chocolate! It is SO EASY! Here’s the recipe Dark and Raw Chocolate

NOTE: you will only need about half the quantity in the chocolate recipe, so either make a half batch or:  Lay a piece of baking paper in a small dish, spread with roasted almonds (or any roasted nuts) and then pour over the remaining chocolate! Place in the fridge and break into bars when cold.

Caramel_just_dipped_Chocolate_ChewsDip your caramel cubes in one by one, tossing gently with a fork. Lift out gently (letting some of the chocolate drain away) and place onto baking paper. Into the freezer they go… and they will be ready to eat in five minutes! Yippeeeee.

I always keep mine in the freezer (so the rest of the family can’t find them! hahaha)…but really, the ‘caramel’ is chewiest if you eat them straight from the freezer. Next time, I suggest you make a double batch! :))
