Caramel Slice (Raw, Gluten & Sugar free)

Woohoo…. Healthy Caramel Slice!!

Before you start… soak half a cup of cashews in water (preferably filtered!) for at least a half hour. You will need these for the ‘caramel’ layer. 

This recipe makes 16 small squares… so feel free to double it!

BASE

  • 1 cup Medjool Dates
  • ½ cup Almonds
  • 1 tsp Coconut Oil

Pulse dates, almonds & coconut oil in a food processor until it resembles fine crumbs and sticks together when pressed. Pour mixture into a small slice tin (mine measures 12 x 18cm) lined with non-toxic greaseproof paper and press it down to form the base. Place it in the freezer.


CARAMEL

  • 1/2 cup DatesRaw_Caramel_Slice
  • 1 Tbsp Coconut Oil
  • 1 Tbsp Tahini
  • 1 Tbsp Maple Syrup (less if you would like it less sweet)
  • 1/2 cup raw Cashews (covered and soaked in water for at least half an hour and then rinsed)
  • 1 Tbsp water

Put all your ‘caramel’ ingredients into a blender and pulse until completely combined and smooth (you may need a little extra water to help blend it but try and keep it to a minimum). Pour caramel mixture on top of the base and return it to the freezer to set.

 

 TOP CHOCOLATE LAYER

  • ¼ cup (40g) Cacao Butter (can substitute with Coconut Oil)
  • 1 Tbsp Maple Syrup (taste test – and add another if you would like it sweeter)
  • ¼ cup (25g) Cacao Powder

Gently melt the cacao butter. Stir in the maple syrup and cacao powder. Spread the chocolate sauce on top of the caramel filling. Pop it back into the freezer for an hour and then remove it from the slice tin. Cut into pieces and store in an airtight container in the fridge or freezer. We eat it straight from the freezer!
