It looks like a cheesy dip… it tastes like a cheesy dip… but actually it is a dairy free, protein packed nutritious dip that could likely become a permanent part of your staple diet! 🙂
If I’m out all day, I love to make a snack pack of cashew dip, vegetable sticks and crackers!
QUICK AND EASY TO MAKE!
Double this quantity if you want a large batch:
Into your food processor or blender (the appliance that will mill your nuts the finest) mill for one minute:
1.5 cups raw cashews (ideally soaked for a minimum of two hours… but if time is short don’t worry… just throw them in!)
And then add all of the following:
- 1 clove garlic crushed
- 3 tbspn lemon juice (approx)
- 1 bunch coriander (or half if you prefer)
- Add in some fresh oregano or thyme if you have it available (otherwise add 1 or 2 tspn of dried)
- 1 tbspn extra virgin coconut oil
- 1(or 2) tbspn chia seeds (optional)
- Two grinds of rock salt
- A few grinds of black pepper
Blend again for up to a minute. Chill in the fridge before serving.
Eat and enjoy… delicious and nutritious!!
