Try this nutrient dense bar!

It’s super quick to whip up and can be eaten straight out of the freezer.

If you don’t have some of the dry ingredients in your cupboard substitute with what you do have. For fussy kids substitute the cacao nibs with chocolate chips (to add extra sweetness)… and once you’ve got them hooked, do the sneaky switch ;). We chopped the goji berries and pecans in a food processor – you can always do it by hand.

Energy_Boost_Bar_RecipeIn a large pot melt on low heat:

  • 100g cacao butter (or substitute coconut oil)
  • 150g coconut oil

Turn off heat and stir in:

  • 3 tablespoons of raw honey

Stir in dry ingredients, ensuring it all gets coated with the wet mix

  • 2 tablespoons of cacao powder
  • 3 cups brown rice puffs
  • 1/2 cup hemp seeds
  • 1/4 cup goji berries blitzed
  • 1/4 cup pecans (or any nut) blitzed
  • 1/4 cup sesame seeds
  • 1/4 cup pepitas
  • 1/4 cup chia seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup cacao nibs

Press into a baking tray. We used a large tray 265 x 325mm or you could use two smaller dishes instead.

Pop in the freezer for around an hour. Cut into bars once firm. Best eaten straight from the fridge or freezer (ie. they will fall apart in a lunch box if not kept cool).
