Five Minute Muesli Bars

The perfect solution for your over ripe bananas AND great for lunch-boxes!Bananas

Just five minutes to whip up (and 35 mins to bake). 

  • Turn your oven on to 200oC

INGREDIENTS

  • 3 medium size ripe bananas (about 300g when skins removed)
  • 3/4 cup rolled oats
  • 4 medjool dates, chopped finely
  • 1/3 cup desiccated coconut
  • 1/4 cup sunflower seeds
  • 1 Tbsp chia seeds (optional)
  • 1/4 cup choc chips (optional)
  • 1 tsp ground cinnamon

I add chocolate chips to get them past the taste test for the kids… but they are still good with out. Another option is to make your own healthFULL chocolate (recipe here) and pour a layer over the muesli bars once cooked!

 

METHOD

  • Five_Minute_Muesli_BarsIn a bowl, mash your bananas with a fork
  • Mix in all the other ingredients
  • Press firmly into a 20 x 20cm lined baking dish (I keep my butter wrappers and use these as liners).
  • Sprinkle a few extra choc chips on top (and gently press them in to the mix).
  • Pop into the oven for 30-40 mins (or until brown on top).Cooked_Five_Minute_Muesli_Bars

Leave to cool… then cut into small bars!

Try experimenting with the ingredients – ie: add more dried fruit, nuts or seeds!
