Fried Rice – without the rice!

Quite surprisingly, cauliflower is PACKED WITH NUTRIENTS!! One cup of cauli offers over 75% of the recommended dose of vitamin C, 20% of vitamin K, 2 grams of protein plus a whole host more!

As long as you have garlic, ginger, onion, cauliflower and eggs on hand, then just be creative with whatever vegies you have in your garden or fridge. You will need a food processor to turn your cauli into ‘rice’… however, you can chop your cauli by hand if need be!Cauliflower_Rice

INGREDIENTS

  • 1 Tbsp coconut oil
  • 2 cloves garlic, diced finely
  • 1 large onion, diced finely
  • 3cm knob of ginger, peeled & grated
  • 3cm knob fresh turmeric, peeled & grated (or replace with 1tsp dried)
  • 1 tsp Indian Curry Powder
  • Good dose of cracked black pepper
  • 1/2 a cauliflower, processed to resemble rice (more info below)
  • 4 eggs, whisked
  • Handful of raw cashews, sunflower seeds, sesame seeds (any or all of these)
  • Diced shallots for serving (or replace with chives or coriander)
  • 1 Tbsp tamari
  • 1 Tbsp sesame oil

OPTIONAL EXTRA VEGIES – use any of these items, diced into small chunks OR if you prefer to hide the vegies from your kids process with your cauliflower so they ‘disappear’ 😉  :

  • Celery, Carrot, Zucchini, Broccoli, Kale, Beans, Capsicum, Cabbage

Process your cauliflower (carefully)… you do not want it too fine (or it will just become mush) so keep an eye on it… too chunky is better than mushy! See the picture above.

  • In a large fry pan heat your oil and then saute your onion and garlic .
  • Add in your spices and mix until fragrant (approx 1 min)
  • Add in cauliflower and other vegies, cook for approx 10 mins mixing often so it doesn’t stick.
  • Pour your eggs over and mix quickly to coat all your ‘rice’.
  • Add your nuts, seeds, tamari & sesame oil and mix in.
  • As soon as your egg is cooked (2 mins) it’s ready to go!

Perfect served with a little extra tamari and chopped shallots, but any fresh herbs will add a nice touch! :))

 

I love this for breakfast…. and it makes a nice easy dinner… or for something a little more gourmet: Serve it in ‘lettuce cups’ (either iceberg or cos lettuce leaves) with a sprinkle of sesame seeds and a little extra tamari and some sweet chilli sauce poured on top!
