Double the mix and keep half the dry mix in the cupboard for a very quick meal another night!
2.5 cups besan flour
- Few springs of parsley chopped finely (or use parsley flakes if you want to store dry mix)
- 3 cloves garlic crushed (or 2 tsp garlic powder if you want to store dry mix)
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp ground coriander
- 1 tsp turmeric powder
- pinch chilli powder (or more if you like a kick!)
- 1 tsp baking powder
- 1 tbsp chia seeds
- 2 tspn ground salt
- A few grinds black pepper
Mix all the ingredients together and store in an airtight container. To make falafels, combine 1 cup dry mix with half a cup of water and 2 tsp lemon juice (optional). Set aside for 20 minutes to thicken.
Pan-fry spoonfuls of the mixture in your favourite oil (I use coconut oil or ghee) a few minutes each side.
Serve on a warm rice salad dolloped with a good serve of tomato salsa.
