Spices are often forgotten for their many health benefits… This delicious brew is full of antioxidants, will help with digestion and has anti-inflammatory properties.
Traditional Indian Masala Chai
(Masala translates to ‘Spice’ and Chai is ‘Tea’)
Serving size = 4
INGREDIENTS
• 1 litre of water
• 12 cardamom pods
• 1 stick cinnamon
• 8 cloves
• 8 black peppercorns
• 1 star anise
• 2cm piece of fresh ginger (thinly sliced – you can leave the skin on).
• 2 black tea bags (or equiv loose leaf tea)
• 250mls milk of choice (try the Coco Quench coconut milk for a dairy free version)
• Sweetener of choice: I use coconut sugar, 4tspn for a serve this size OR add raw honey to your cup once served.
METHOD
• Place water and spices into a saucepan and bring to the boil
• Add black tea bags and milk
• Bring to the boil again and then simmer for a few minutes
• Remove tea bags
• Add sweetener and continue to simmer for 5-15mins (the longer it simmers the richer the taste).
• Strain and serve immediately for a hot brew… or let cool and serve over ice cubes for a refreshing iced chai!
TIPS
• The spices can be used again to brew another pot the next day.
• Make the brew without milk and you can store this in your fridge for up to a week… just add milk and heat!
