Nurtured Earth News #12

Sourdough vs Commercial Yeast BreadLa Tartine Bread Fruit Loaf

Sourdough is bread which is fermented with a natural leaven as opposed to a yeast bread which is fermented with fresh or dried baker’s yeast.

Before the introductionΒ of commercial yeast, most bread was made in the β€œsourdough style” using the traditional process of fermentation. It is during this fermentation process the good bacteria are created and break down the gluten proteins. For this reason many β€˜gluten intolerant’ people have no issues in eating Sourdough bread.

The lactic acid created in the fermentation also does a wonderful job of breaking down the phytic acids for you

– this does not happen in commercial yeast breads and is another VERY GOOD REASON to switch over to sourdough (if you haven’t already ;))

If stored properly, due to the presence of β€˜good bacteria’ sourdough will resist mould, stay moist, and won’t grow stale for a reasonable period of time. Keep your bread wrapped in a tea towel (or similar) in a cool dark spot (ie. aΒ drawer or a bread box).

Don’t be fooled by some varieties ofΒ ‘sourdough’ that are nothing more thanΒ commercial yeast breads with added vinegar!

We are lucky enough to haveΒ our own organic sourdough bakersΒ here in Somersby:Β La Tartine (Australia’s first certified organic sourdough bakery).

PLEASE NOTE:Β Β Due to LaTartine adjusting their prices, you will see the prices ofΒ sourdoughΒ have slightly increased. However, this wholesome food remainsΒ value for money πŸ™‚

NHELP… Nurtured Earth Organics needs a newΒ warehouse!

We have just been informed that we will need to move out of our Avoca headquartersΒ at the end of January.

Please let us know if you are aware of any spaces that may be suitable for our organic grocery goodness operations!Β We would consider sharing a cafe/shop if there is reasonable packing space at the rear ORΒ open to other ideas too!

Later this week we will be sharing a recipe for Indian Spiced Banana Bread (Gluten Free)Β Indian_Spiced_Banana_Bread_Sugar_Gluten_Free

Check your pantry for Coconut Flour, Desiccated Coconut, Chia Seeds and these spices: All spice, Cardamon, Ginger and Cinnamon.

Avoca_Kayak_ClubCOMMUNITY CONNECTIONSharing_The_Love

This week we are sharing the love with the Avoca Kayak Club! This is a recently formed club in Avoca Beach.

They have several experienced coaches and elite athletes who are also mentors to the newer paddlers and there is a core group of young paddlers who attend regular training sessions.

The Avoca Kayak Club isΒ a family orientated club and include people with disabilities.
The club has limited equipment and needs to purchase more stable kayaks and repair the ones they presently have. Please support their fundraising efforts by attending their Trivia night on November 21.

New members are welcome to join – be it to compete or just for a new leisure activity that’s fun and promotes a healthy lifestyle.
