🌿 **QUICK PICKLED LOCAL FENNEL** Fennel is in sea 🌿 **QUICK PICKLED LOCAL FENNEL** Fennel is in season, this is such a simple way to make it last a little longer. Crunchy, tangy and lightly spiced — delicious with salads, sandwiches, cheese, fish, roast meats or straight from the jar. Note: this is a fridge pickle recipe not a shelf stable preserve. INGREDIENTS 3 large fresh local fennel bulbs, very thinly sliced 2½ cups apple cider vinegar 2½ cups water 2 tsp sea salt 2 tsp raw sugar 1½ tsp fennel seeds 1½ tsp black mustard seeds 1½ tsp black peppercorns 2 garlic cloves, thinly sliced 4–5 strips lemon peel A few fresh fennel fronds METHOD Add the apple cider vinegar, water, salt, sugar, fennel seeds, mustard seeds and peppercorns to a saucepan. Bring just to the boil, stirring until the salt and sugar dissolve. Pack the freshly sliced fennel into clean jars with the garlic, lemon peel and a few of the beautiful feathery fennel fronds. Pour the hot pickling liquid over the fennel until completely covered. Allow to cool to room temperature, pop the lids on and **store in the fridge**. You can eat it once chilled, but it's even better after 12–24 hours when all those flavours have had time to mingle. 🌿 Fresh local produce, preserved simply. Asian-inspired lettuce cups on the BBQ. Finely chopped vegetables cooked through the mince, spooned into crisp cos lettuce leaves...YUM! A cheeky butcher bird decided he loved it too! I started to make Nettle soup (as promised) BUT noticed I had a heap of slithered almonds that needed using so FLIPPED to PESTO. . I used what I had: Garlic, fresh coriander, wild Nettle, lime juice and rind, olive oil, rocket, parmesan, slithered almonds, salt and pepper. . I love it!
