I started to make Nettle soup (as promised) BUT noticed I had a heap of slithered almonds that needed using so FLIPPED to PESTO. . I used what I had: Garlic, fresh coriander, wild Nettle, lime juice and rind, olive oil, rocket, parmesan, slithered almonds, salt and pepper. . I love it! One of our favourite ways to enjoy them is as crispy roasted wedges with a creamy lime quark dip. ✨ Sweet Potato Wedges β€’ 2 large sweet potatoes β€’ 1 tbsp arrowroot β€’ 1 tbsp olive oil β€’ 1 tsp paprika β€’ Β½ tsp oregano β€’ Salt & pepper Toss together and roast at 220Β°C for 25–35 minutes until golden. ✨ Lime Quark Dip β€’ 250g quark β€’ Zest of 1 lime β€’ 1–2 tsp lime juice β€’ Β½ tsp paprika β€’ Β½ tsp oregano β€’ Salt & pepper Mix together and serve with warm wedges.
