This is a MUST HAVE snack that should permanently live in your fridge. Instead of grabbing that processed packet of nil nutrition… if you have hummus on hand, then you have a tasty nourishing snack ready to go. I love a crunchy carrot stick with hummus… or try it on capsicum sticks!! Yum yum!!
The traditional grey/brown colour of hummus has never quite worked for my visual tastebuds… so brighten it up with some sundried tomato!
You will need a food processor to blitz this in…
INGREDIENTS
1 can Chickpeas, drained
1 or 2 garlic cloves (it’s more the better in our house… and raw garlic is so good for you!!)
40g of our organic Sundried Tomatoes (about 10 pieces)
1 Tbsp Lemon Juice
3 Tbsp Hulled Tahini
1/4 cup Olive Oil (50ml)
Ground Black Pepper to taste (I like lots!)
METHOD
Blitz (or crush) the garlic
Add in all other ingredients and blitz… you will need to scrape down the sides of your processor a few times.
Do the taste test. If you would like it runnier add more oil or if you like extra tang add another squeeze of lemon juice… Chill before eating.
