This simple carrot salad always gets praised when I whip it up for a gathering. The mint adds a hit of freshness and lots more health benefits of course! More about MINT HERE
As long as you have carrots, mint, lemon and olive oil – the rest are Optional Extras!
Mix into a medium size bowl:
- 5 or 6 large carrots (peeled & grated)
- Mint – a good handful (chopped finely)
- Coriander – small handful (chopped finely)
- 1/2 a cup of Seed and Nut mix (raw is always best for nutrition, but for a flavour kick gently toast half of these and then leave to cool before adding to salad).
- If you have Feta on hand, crumble some through for a delicious addition!
SIMPLE LEMON DRESSING
- Juice of 1 lemon (approx 1/4 cup juice) and tip into a small jar
- Add 1/2 cup extra virgin Olive Oil (and I always add a big dash of cold pressed flaxseed or hemp oil too for the health benefits)
- Salt and Black Pepper
Put the lid on and SHAKE IT!
Mix about two thirds of the dressing into the salad. Add more to taste. The extra dressing will last in your cupboard for a couple of weeks and is great on any salad!!
If there’s any leftovers, this carrot salad still tastes great the next day… So GET GRATING 🙂
