๐ŸŒฟ **QUICK PICKLED LOCAL FENNEL** Fennel is in sea ๐ŸŒฟ **QUICK PICKLED LOCAL FENNEL** Fennel is in season, this is such a simple way to make it last a little longer. Crunchy, tangy and lightly spiced โ€” delicious with salads, sandwiches, cheese, fish, roast meats or straight from the jar. Note: this is a fridge pickle recipe not a shelf stable preserve. INGREDIENTS 3 large fresh local fennel bulbs, very thinly sliced 2ยฝ cups apple cider vinegar 2ยฝ cups water 2 tsp sea salt 2 tsp raw sugar 1ยฝ tsp fennel seeds 1ยฝ tsp black mustard seeds 1ยฝ tsp black peppercorns 2 garlic cloves, thinly sliced 4โ€“5 strips lemon peel A few fresh fennel fronds METHOD Add the apple cider vinegar, water, salt, sugar, fennel seeds, mustard seeds and peppercorns to a saucepan. Bring just to the boil, stirring until the salt and sugar dissolve. Pack the freshly sliced fennel into clean jars with the garlic, lemon peel and a few of the beautiful feathery fennel fronds. Pour the hot pickling liquid over the fennel until completely covered. Allow to cool to room temperature, pop the lids on and **store in the fridge**. You can eat it once chilled, but it's even better after 12โ€“24 hours when all those flavours have had time to mingle. ๐ŸŒฟ Fresh local produce, preserved simply. ORDER BY 2.30PM SUNDAY if you would love some in your order. (Fennel ..haha NOT the pickles!) #centralcoastorganics #smallscalefarming
