It’s not often I resort to things out of jars… but if you’ve scoured the fridge and the pantry and still need a solution this is definitely it!
Ticking all the boxes: quick, tasty and receiving the thumbs up from the kids and hubby, I think this one may become a staple!
Ingredients:
- 1 jar salsa
- 2 cans black beans (or whatever beans are in the pantry!)
- 1 packet Mountain Bread
- 1 jar Pasta Sauce (or make your own simple sauce from cooking garlic, onions, tomatoes, herbs, veg stock… plus optional carrot, celery)
- 1 cup grated cheese
Method
- In a bowl, mix together the salsa and (drained) beans
- Trim pieces of mountain bread to fit the width of your baking dish.
- Put a generous serve of your mix onto your wrap and roll.
- Continue this until your baking tray is full
Pour over one jar of your favourite pasta sauce
- Top with grated cheese.
- Bake at 200oC for 40 mins (or until cheese is brown on top).
Serve with your favourite salad or steamed veg.
