Asian-inspired lettuce cups on the BBQ. Finely chopped vegetables cooked through the mince, spooned into crisp cos lettuce leaves...YUM! A cheeky butcher bird decided he loved it too! One of our favourite ways to enjoy them is as crispy roasted wedges with a creamy lime quark dip. ✨ Sweet Potato Wedges β€’ 2 large sweet potatoes β€’ 1 tbsp arrowroot β€’ 1 tbsp olive oil β€’ 1 tsp paprika β€’ Β½ tsp oregano β€’ Salt & pepper Toss together and roast at 220Β°C for 25–35 minutes until golden. ✨ Lime Quark Dip β€’ 250g quark β€’ Zest of 1 lime β€’ 1–2 tsp lime juice β€’ Β½ tsp paprika β€’ Β½ tsp oregano β€’ Salt & pepper Mix together and serve with warm wedges.
