Asian-inspired lettuce cups on the BBQ. Finely chopped vegetables cooked through the mince, spooned into crisp cos lettuce leaves...YUM! A cheeky butcher bird decided he loved it too! I use whatever veg I have but never skip the ginger and the asian dressing! I started to make Nettle soup (as promised) BUT noticed I had a heap of slithered almonds that needed using so FLIPPED to PESTO. . I used what I had: Garlic, fresh coriander, wild Nettle, lime juice and rind, olive oil, rocket, parmesan, slithered almonds, salt and pepper. . I love it!
