Tabouli Twist

to Simone Glover for this quick and nutritious recipe… Simone discovered this wonderful combination when deciding to make Tabouli and did not have the standard ingredients on hand…

This is a really tasty salad… and delicious in a wrap… or add your favourite protein to make it a Meal on its own.

 

INGREDIENTS

  • 1/2 red cabbageTabouli_Twist
  • 1 cucumber
  • 1 bunch of mint
  • 120g of English spinach (a punnet or bunch)
  • 1 red onion
  • 1 bunch coriander
  • Your choice of grain: Freekah, Rice, Barley, Quinoa – (1 cup dry) cooked and left to cool

DRESSING  –  1 lemon – juiced, olive oil, salt & pepper

METHOD

  • Grate the red cabbage.
  • Chop all the other herbs and vegies finely then toss with the cabbage
  • Add in your cooked grain (once cooled!)

DRESSING

  • Tip the juice of your lemon into a small jar
  • Add double the amount of olive oil
  • Add a good grind of salt and pepper
  • Put on the lid and give it a good shake
  • Pour half the dressing over the salad shortly before eating… taste it and check if it needs more and adjust accordingly

This recipe is very flexible! Add more or less greens and cabbage….just make sure the mint and lemon flavours aren’t overpowered….keep tasting as you go. 

Still great the next day for lunches!
